Well, Christmas is nearly here and this year we are doing things
slightly differently (for us anyway!).
We are having Beef Wellington the dinner this year and I have been
given the task of making pudding. The only problem is I have no idea
what to do.
Anybody got any ideas? It must have no alcohol as my mum and niece
dont like it and preferably something light so that there is still room
for tea!

How about an Australian frozen Christmas pud? (It's hot here at Xmas so
my family often has this - it's like an icecream gateau, in the shape
of a pud). I can ask my mother for the recipe, if you like.

I think you want Yorkshire pudding ... a traditional with Beef

I have had an ice cream similar to .2 It had coffee, tia maria, loads
of dried fruit in and there was none left for Boxing Day ! I'll have a
look for the recipe tonight.

Here's the Christmas ice cream recipe
Serves 6 to 8 people, the measurements are Metric/UK and any
combination of dried fruit could be used.
4 Tablespoons of Brandy
25g/1oz dried cranberries
25g/1oz dried mango slices (chopped)
25g/1oz dried ready to eat apricots, chopped
25g/1oz raisins
600ml/1 pint double cream
65g/2.5oz light muscavado sugar
75g/3oz fresh brown breadcrumbs
25g/1oz pine nuts (kernels)
1/2 teaspoon ground cinnamon
fresh cranberries & bay leaves to decorate (optional)
Preheat the oven to 200C/400F/Gas 6. Stir the brandy into the
cranberries, mango, apricots and raisins, leave to soak.
beat the cream and 15g/1/2 oz of the sugar until thickened. Transfer
to a rigid container and freeze, stir every 30 minutes for 3 hours
until almost set.
Mix together the remaining sugar, breadcrumbs, pine nuts and cinnamon
and spread over a baking tray. Bake for 5-10 minutes until golden
brown and caramelised. Cool and break up into small pieces.
Fold the soked fruit and breadcrumb mixture into the ice cream with a
metal spoon until well mixed. Freeze for 2 hours or until set.
Decorate with the cranberries and bay leaves.
This should keep for up to 3 months, leave to soften before serving.
