If I bought an 2500 and slipped a 3Com Ethernet board on the IBM side,
could I run the 3Com etherlink software? What I mean is, does the
2500 (with bridgeboard) fully support IBM compatibility? Could I use
it in Amiga mode at all?

I don't know for sure (as I haven't done it), but people on Usenet
have discussed it, and are (apparently) doing just that.
You should have full IBM compatibility, along with full Amiga
functionality.
