|  |     Not a recipe as such but if I'm making cheese pastry for any canapes,
    I'll usually make up the pastry to the breadcrumb stage, add a handful
    of strong mature cheddar (handful to 4oz flour, obviously 8oz flour
    requires much more), plus half teaspoon mustard and then add the water
    to bind it.
    
    Leave the pastry overnight if poss to chill (or at least 30 mins) and
    then roll out in straw type shapes.  Add sesame seeds to the top and 
    brush with beated egg.
    
    (My cheese pastry canapes I usually fill with homemade smoked mackeral
    pate, or soft cheese and prawns, topped with lumpfish cavier which is 
    quite cheap but sounds impressive!)

    The recipe is similar to a regular biscuit recipe and there is sharp
    cheddar cheese, bout one cup, and a large amount of crushed red pepper,
    some organo too I believe.

    Italian Cheese Sticks
    ---------------------
    
    6 tablespoons butter or margarine
    1 cup shredded sharp cheddar cheese (4 oz)
    1 cup all purpose flour
    1/2 teaspoon dried oregano, crushed
    1/2 teaspoon salt
    few dashes cayenne pepper 
    2 tablespoons water
    
    
    Bring butter and cheese to room temperature.  Beat together butter
    and cheese till well blended.  Combine flour, oregano, salt and 
    cayenne; add to cheese mixture gradually.  Add water; mix till well
    blended.  Form dough into a ball.  Roll out on floured surface to 
    1/4 inch thickness.  Cut into 3x3/4 inch strips or cut into shapes
    with small cookie cutters.  Bake on ungreased baking sheet in 400
    degree oven for 8 to 10 minutes or till lightly browned.  Serve warm
    or cold.  Makes about 40.
