    In looking through recipes for turkey stuffing, numerous recipes call
    for "poultry seasoning".  Since I am, in principle, opposed to buying
    commercial spice mixes (except for the dreaded store-bought curry :-),
    what goes in to "poultry seasoning".  Sage, thyme, salt, pepper,
    and...?

     ...marjoram, rosemary and nutmeg.  By the way, mine does not include
     salt.

|     I believe Bell's poultry seasoning includes ginger.
    
    Then there is a cajun poultry seasoning that has salt, white pepper,
    black pepper, cayenne pepper, thyme, rosemary, and a few other things I
    can't remember off the top of my head.
