I don't know where to put this note so I will let the mod decided.
I made a very adult gingerbread the other night, it had lot of cardaman in
it as well as a lot of other things which a kid wouldn't like the taste
of. I started the process with the idea of having a typical lemon sauce
for it. I was standing in front of the refrigerator, (my usual position),
and noticed the 1/2 gallon of apple cider that was just sitting there.
So, I used the lemon sauce recipe (Joy of Cooking 1951) with 1 cup of
apple cider and a dash of lemon for zip, in place of the water called for
in the lemon sauce, and just followed the rest of the recipe.
Boy were we surprised!!!!!! It is great and absolutely perfect over
gingerbread! I'm off and running with other things I could use this
sauce for.

I didn't use existing notes because it wasn't a ginger bread recipe. I
probably should have put it in sauces. sorry for the error but as I
said I have no problem with mods moving it to appropriate topic

Use any gingerbread recipe.
for Sauce. Look in any cookbook under sauces and find a lemon sauce
made with cornstarch and replace the water with apple cider and only
add a little lemon for zip.
