| 3531.1 | Layered Mexican Dip | MRKTNG::PISECCO |  | Thu May 14 1992 14:02 | 21 |
| | This is how I make it.

    Spread 1 can of refried bean dip (you can find it in the chip section
    of the market)

    Next mash 1 RIPE Avacado with 2 tablespoons lemon juice and 1/4
    teaspoon of salt. Then spread that on top of the bean dip layer.

    Then mix one container of sour cream with 1 package taco seasoning mix
    (I usually don't use the entire package, use as much or as little as
    you like). Then spread that mixture on next.

    Now add the toppings:
    (use as much as you like)

    1 package of shredded cheddar cheese
    chopped scallions
    sliced black olives
    chopped tomatoes

    Use nacho chips for scooping up the dip!

| | Get the can of ORTEGA refried beans... the recipe is on the back. I add
   a package of TACO seasoning to the beans and find it improves the flavor
   quite a bit.

    Then do a layer of Gauc. (avacados, lemon juice and salsa)
    Then a layer of sour cream
    Layer of salsa
    Layer of Cheese
    Then decorate with black olives, tomatoe, jalepenio
   Or any other layering variation you want!

| 3531.5 | This is my FAVORITE! | BAGELS::BAROUD |  | Fri Oct 09 1992 12:01 | 29 |
| | Just in case anyone is looking for yet another version. This happens
    to be my favorite!

    1 Onion
    1 Can of Jalapino (Sp?) and/or Chili peppers
      (both can be used if you like it very hot!)
    1 Package of Cream Cheese
    Monterey Jack Cheese
    Cheddar Cheese
    Salsa (Mild,Medium, or Hot -- you pick!)
    Scallions, chopped (optional)
    Olives, (optional)

    In a pie plate spread the cream cheese over the bottom of the pan.
    Spread the diced onions and peppers (chili, or Jalapino) over the
    cream cheese. Pour salsa over ingredients. Spinkle Cheddar and
    Monterey Jack cheese over the top.

    To make it look "pretty," sprinkle some chopped olives and chopped
    scallions over the top of the two cheeses. Also, for color I usually
    use a yellow cheddar, since the Monterey Jack is a white cheese. On
    the side (since not everyone likes these) I have a bowl of Avacado dip
    and Sour Cream for dipping. One other tip: I find this comes out much
    better if baked in the oven instead of microwaving it. If I have extra
    time, I'll also add fresh tomatos to the salsa. I guess you can do
    almost anything with this dip. It's great!

    Enjoy!

| | Sounds great....how long do you bake it??

 |
| 3531.7 | About 15-20 minutes... | BAGELS::BAROUD |  | Fri Dec 04 1992 16:17 | 6 |
| | Bake it until the cheese is all melted (completely thru). It depends
    on how hot your oven is, but it usually takes about 15-20 minutes.

    Enjoy!
