A woman I work with asked me a question that I didn't know the answer
to and looked up 'turkey' under a directory title/search and couldn't
find the answer either.
She has a turkey carcass - refrigerated - that is over a week old.
She wants to make a soup stock from it and needs to know if she can
do so without the possibility of getting sick?
My first response was 'no'...but then I figured the carcass is going
to be boiled - so perhaps it would be o.k.. She said she is going to
go home and smell it and make a determination from that standpoint.
Anyone have a surefire way of knowing how long to keep it - before it
goes bad?

I don't see any problem with it if it's been in the fridge for a week.

Is this a carcass that is left over from a roasted turkey
(i.e. already cooked) or is it one where the turkey meat has been
cut away before cooking? I'd be less concerned with the cooked version.

Should be just fine, unless it smells bad or has gone moldy or something like that. Especially since it's going to be boiled to death during the soup- making process, anyway. --PSW | |||||
