Hi,
I'm not sure if this is the right notes file to place this in, but my
boyfriends daughter has decided that she doesn't want to eat meat of
any kind. Now I know meat provides protein and other vitamins that the
body needs. Does anyone out there have any recipes that would provide
the necessary vitamins she needs??? She has given up eating fish and
chicken too!!!! Also she is only 13 and still growing, I don't want
her to deprive herself of the vitamins that she needs.

Add SAFRON::VEGETARIANISM there are lots of recipes and interesting
discussions around being a Vegan......she's a smart young lady to want
to do this.

For a person making the transition, veggie burgers can ease the
discomfort. They can be delicious in their own way.
You can get them ready made in cans in the health food store.
You can also buy boxed mixes in the health food store.
Most veggie cookbooks have one or more recipes, comprised of beans,
grains, nuts, and mashed or chopped vegetables, or some combination of
the above, sometimes with the addition of egg. (Not all vegetarians
eat eggs.) Ditto cheese.
Back in the hippie heyday, round about '69, I visited some folks in
Cambridge, Mass. The lady of the household showed me this one. All
quantities are very approximate. Just to give you an idea.
In a blender, grind each of the following ingredients one by one,
dumping them into a large bowl before grinding the next one.
- 1 cup walnuts
- 4 slices whole wheat bread (more if using the airy kind)
- 1/2 green pepper
- 1/2 onion
- 1 egg
Season with pepper and mix well to blend. Either form into burgers and
sautee in a small amount of oil, or brown in oil while stirring to
break up lumps. You can use this to make sloppy joes or fill stuffed
peppers.
From the days of VW vans, incense, Indian print bedspreads, bead
curtains, hash pipes, and dinner in a wooden bowl. . .
Play the Grateful Dead for mood music.

Nobody mentioned TOFU....easy to cook, low calorie and high in calcium.
It does take some getting use to the texture. Pick up a tofu cookbook
for her and if she's serious she should be the one doing the reading
and cooking...

Thanks for all of the info so far....I've looked into the veggie
notes file. They have some good info in that file. I do agree with
.4. I've already told her that if this veggie thing was something
that she was serious about that it would be up to her to get educated
on all the facts and be able to prepare her own food. I have this
feeling that when she finds out the things that she is going to have to
eat to supplement her diet, she may have a change of heart. She is not
a fan of beans, tofu or nuts....
I am still interested in vegetable dishes though so fi you have them
I'd appreciate them!!!!
