|  |  Tuna is a delightful fish that does not need a whole lot of anything to taste
good. Here are some marinades that work well with tuna, shark, swordfish
and other fleshy fish. Marinade for 2-3 hours and grill.
 Marinade 1:
 1/2 cup olive oil
 juice from 1 whole lemon
 1 tsp parsley
 1 tsp rosemary
 fresh ground pepper
 salt
 1 clove garlic (mashed or minced)
 Marinade 2:
 1/2 cup olive oil
 1/4 cup soy sauce
 2 TBS dijon mustard
 1 clove garlic (mashed or minced)
 Marinade 3:
 1/2 cup olive oil
 1/4 cup wine vinegar
 1 tsp parsley
 1 tsp tarragon
 fresh ground pepper
 salt
 1 clove garlic (mashed or minced)

   Smear them with a mixture of mayo and horseradish or garlic and then slap
   them on the grill.

|  |     I am of Cape Verdean extraction and this is how we marinade tuna steaks
    (sorry but I don't measure)
    
    wine vinegar mixed with several cloves of garlic mashed or sliced, salt
    and pepper - liquid should be just enough to cover the steaks
    refrigerate over night - you can put them on the grill or roll in fine
    corn meal and fry in small amount of oil
    
    this marinade is great for pork chops also.

|  |     I have done them in a kind of teriyaki style with excellent results,
    the marinade being fresh ginger and garlic, soy sauce and a bit of
    olive oil to prevent sticking on the grill. A bit of white pepper would
    also go well with the above ingredients.
