the following recipes are for syrup, not sauce. If making sauce, you use
much less sugar, and cornstarch (or equivalent) to thicken.
		basic syrup
	ingredients for non-fruited syrup:
		4 cups sugar
		3 cups water
heat over low heat, stirring constantly until sugar is dissolved.
simmer over medium heat until thickened - approx. 10 minutes.
cool for 10 minutes. Flavor by adding bottled flavors such as
Maple, rum, etc. Store in closed container in refrigerator.
	ingredients for apricot syrup:
	1 lb. dried apricot halves
	2 cups water
	2 cups sugar
using kitchen shears, snip apricot halves into small pieces.
heat sugar and water over low heat until sugar is dissolved.
add apricots and cook until apricots are tender - approx. 10
minutes. cool for 10 minutes off stove burner. puree mixture
in batches in a blender or a food processor. Put mixture back
in pot and heat to a simmer over medium-low heat, stirring
constantly, and simmer until thickened to taste. If too thick,
thin by adding a little water and simmering for a few minutes.
when at desired consistency, remove from heat and cool 10
minutes. Add 1 teaspoon almond flavoring if desired. You can
also add a shot of apricot schnapps for adults-only syrup.
	ingredients for strawberry syrup:
2 pints fresh strawberries or equivalent frozen whole berries
	1 cup water
	2 cups sugar
puree berries in blender or food processor, adding just enough
of the water to make them puree nicely. Add sugar and stir
in to mix. Heat strawberries, water and sugar over low heat
until the sugar is well dissolved. Simmer to thicken, stirring
	constantly, if necessary.
when at desired consistency, remove from heat and cool 10
minutes. Add 1 teaspoon red food coloring if desired. You can
also add a shot of strawberry schnapps for adults-only syrup.
Other fruits can also be used, either dried (like the apricot recipe) or
fresh (like the strawberry recipe).
