    you're right.  Use a pumpkin pie recipe substituting squash
    
    for the pumpkin.  I've done this before with good results.

|  |     For the squash pie, if you are interested in using a pumpkin pie
    recipe, there is one in the Fannie Farmer Baking book which is very
    nice.  My husband loves it, even though he claims that he doesn't like
    desserts usually.  I have always made it with fresh pumpkin or squash.
    The unusual feature of this recipe is that it uses a cornmeal crust,
    which is a little more crunchy than normal.  It is best as fresh as
    possible.

    goodmorning!!!! thanks for the quick responses.  i think i might
    try a nice white burgendy for the wine ... it sounds like a good
    selction. ( wonder if........................ hm...............
    if beringer makes one?  anyhoo, about the pie; i think your all
    right, pumpkin substitution will be o.k.  .3 i hope i can find a
    cornmeal crust already prepared because the last thing i have yet
    to accomplish in cooking is pastries.  i have been trying for years
    to perfect dinners and alas, had no need for sweets.  i still
    have no need for them (ha ha) but squash pie has been requested
    and i don't believe that is a sweet pie anyways.
                      
    thanks again, i guess i have alot to do eh?  looking forward though,
    i have an upcoming weekend of lobsters, shrimp and prime rib; what
    could be better?! (hmmm)

       Instead of trying to sneak the Fannie Farmer recipe out of a
    store, just check it out at your local library. They usually have
    a good selection of cookbooks and Fannie Farmer is pretty popular.

|  |     just to let all of you and thank you for your responses... my dinner
    went absolutely great!  we ended up having the following:
    
    Filet Minon (sp?)
    Tomato Vegatable Ravioli
    Spinach w/wine vinager
    Squash Pie
    
    nothing else was needed; there was plenty there; believe me.
    
    i had used my best linens for the table, a crystal bowl with five
    star shaped floating candles next to one single very tall candle
    and our best china with our silver.  the dinner was real real good.
     
    as for the desert; i used a regular pumpkin recipe and substituted
    fresh squash for the pumkin.  the recipe called for spices, half
    and half, an egg and an unbaked pie crust.  i used a box mix for
    the crust which was pleasantly flakly and drained the squash real
    well.  with those combinations the pie was perfect, in fact, we
    each had two (2) slices ... not one.
