For those of you who hate to throw out anything, here's a way to use
grapefruit or orange rind.
GRAPEFRUIT RIND CANDY
Cut grapefruit rind into thin strips.
Put rind into a large pot of cold water. Bring to a boil.
Pour off the boiling water. Cover again with cold water
and bring to a boil. Repeat until you've poured off the
water 3 times.
Now that you've poured off the boiling water for the third
time, cover the rind with cold water once more (this will
cool it off). Pour the water off and gently squeeze the
rind (so it's not soggy wet).
Measure the rind. For every 1 cup of rind you need 1 cup
of sugar.
Pour the sugar in a large skillet and add just enough orange
juice to moisten. Bring to a boil.
Lower heat and add the rind. Stir constantly until all the
liquid is boiled out (be careful, it burns easy).
Roll in more sugar and place on cookie sheets. Dry overnight.
Store in tightly sealed container. It's a good idea to use
wax paper between layers because the candy can get sticky if it
gets humid. You can also do this with orange rind.
