     Here's how I do it,
    
     Pan fry the steak until done to your liking. Remove steak to a
    warm plate and cover with tin foil. Remove any excess grease from
    the pan. Add 1TBl of butter and some minced shallots or onions 
    to the pan and saute them for about 2 minutes. Then add to the
    pan 1TBl of cognac, 1Tbl beef stock, 3 Tbl of heavy cream. Reduce
    the liquid by about a third and then add 1-3 Tbl of green peppercorns
    to the pan. Serve the sauce over the steak. This also is great for
    pork and chicken cutlets. I really like potatoe pancakes and salad
    with this dish.

|  |     If you want to cheat, Knoor makes a green peppercorn sauce.  It
    is not so good as homemade, but it's passable.  On the other hand,
    their bernaise is pretty good.

             GREEN PEPPERCORNS
    
    
      Hi,
    
        I have a simple question that I hope has a simple answer. 
      I have searched HIGH and LOW for Green Peppercorns, but could
      only find Black, like the kind you grind for pepper.  Are they
      the same?  If not where can I get green peppercorns????

|  | Green ones are usually soft, and kept in vinegar in a jar.  If you are 
searching the grocery stores, they might be kept with the capers and such 
rather than with the salt pepper and spices.

    Look in a gourmet shop, the one in my town (Sturbridge) has all
    different kinds of peppercorns in plastic tubes about 8 inches long
    and about 1 inch in diameter, displayed on a rack.

|  |     You might also try Idlewild Farm in Acton.  They usually carry a
    wide selection of spices.

|  |     Oddly enough, I have seen them in gift shops.  They were in plastic
    tubes, much like .2, but had recipes attached to them (green peppercorn
    sauce).  Where do you live?  I know I saw them in a small shop in
    the Searstown Mall in Leominster MA.

    	I live in Detroit and have found them at a local chain grocery
    store. They were dry packed the same as black peppercorns.

    If you live within driving distance of Westboro, try Julio's liquor
    store.  They have a gourmet food section that has just about any
    thing you could want.  I just found Chestnut puree there after
    searching the country side.

|  | re .8 -- I second the motion for Julio's Liquor store.  I have tried to find
such things as pine nuts, capers and chutney in the grocery stores in the
Westboro area.  Usually the stock persons don't even know what these things
are, let alone where I might find them.  Now I just go to Julio's Liquor store.
I suspect that I'm paying a premium, but at least I get what I want and don't
waste lots of time looking for it.
re .0 -- I recall seeing green peppercorns at Spags -- along the back wall in
the spice section.  If you get by there, it might be worth checking.

    In my pepper grinder, I use a mixture of black, red, green and white
    peppercorns.  It looks quite festive sitting on the table with the
    salt grinder.

|  |     I have DRY green peppercorns at home. I got them at Alexanders
    mkt in Manchester, NH. in the gourmet food section. Some
    of my recipes call for the peppercorns to be coursely ground.
    But I've seen green peppercorns packed in a liquid also.

|  |     I have recently been looking for the different types of peppercorns
    also.  I found them, along with a mixed one, in The Kitchen, which
    is a kitchen place in the local mall.  I know of two such stores,
    one in Manchester, NH and one in Nashua - Pheasant Lane.  They carry
    red, green, white, mixed, and several others - all dry and in the
    tubes.

|  |     I saw them just over the week-end in Williams-Sonoma.  They are
    located in the new section of Burlington mall, and also in Faneuil
    Hall marketplace.  Williams-Sonoma is located in various cities
    throughout the country, so I'd check your local phone book.  They
    have everything you could imagine--I love this place!
