Am I quick or what?! 8-)
Prep. Time: 25-30 min.
Makes about 8 dozen mints.
1 pkg (8 oz) cream cheese
1/4 cup soft butter
2 lbs powdered sugar
1/2 tsp peppermint, wintergreen or lemon extract
few drops of food coloring: red, green, yellow (as desired)
1. Combine cream cheese and butter in heavy bottomed saucepan.
Stir over low ehat until cheese is soft, butter is melted and
mixture is thoroughly blended.
2. Add powdered sugar and stir until well combined.
3. Add your choice of food coloring and flavoring. (if desired,
you can divide the batch and make 2-3 different colors adding
extract to taste)
4. Roll into 1" balls. Place on a sheet of waxed paper. Press
with fork or cookie stamp for design on top.
5. Let stand, uncovered for 4 hrs. or overnight until mints are
firm and outside is dry, but inside is still moist and creamy.
