And there's a Scottish dish that I make sometimes, called kedgeree
which is a curried finnan haddie with rice. You take a big piece
of finnan ahddie and set it to simmering on the stove in a skillet
with enough water to cover it. Meanwhile hardboil a couple of eggs
and cook some rice. Drain the fish, pick out any bones and flake
it apart with your fingers into a casserole dish. Stir in the rice,
the finely chopped egg, and some curry powder to taste. Then put
the whole thing in the oven for a little while to warm it all up
and blend the flavors.
We always make too much and I get tired of it after the third time
as a leftover, but my wife loves it.
