I have a recipe that calls for unsalted butter. Would
whipped unsalted butter be acceptable?

In terms of flavor, yes -- in terms of amount, you'll have to use
additional whipped butter to match the amount called for in the
recipe. (6 sticks of whipped = 1 pound = 4 sticks unwhipped)
