|  |     Use whatever fish you like, for example, half haddock fillets and
    half cod fillets, to tal 3 lb.
    1 large onion
    3 T oil
    3 t sugar
    3 t salt
    1/2 t white pepper
    3 large eggs
    5-6 T medium matzoh meal
    2 T ground almonds
    
    Skin and fillet fish (if necessary, or get fish store to do it).
    Wash fish and drain in colander.  Cut into chunks that will fit
    in meat grinder.  Run through coarse blade of grinder.  In blender
    blend egg, seasonings, oil, onion, and water (if needed) to a smooth
    mush.  (Your grandmother didn't have a blender or a meat grinder
    - at least, mine didn't - this is a big job done by hand.)
    Put minced fish in a bowl and add egg mixture, ground almonds, and
    enough matzoh meal to produce a mixture you can form into patties.
    
    To cook, poach in fish broth for 1 1/2 hours, then uncover and cook
    for another half hour to reduce the stock.  Cover and chill overnight.
    
    You can also fry the balls, rolled in cracker crumbs.

    LEFSA
    
    
    10 medium sized potatoes
    1 - 1 1/2 cup flour (well sifted)
    A stone frying pan (the heavy black one)
    
    Now, first of all...this recipe takes time to master.  Be patient,
    don't give up...you'll love this stuff!
    
    Boil potatoes until tender.  
    Cool potatoes in a bowl in the frig (this may take a while)
    Mash the potatoes with your hands
    Slowly add flour to this mixture until you get a consistency
      where it will "stay together" fairly well
    Take a ball of the "dough" and lay it on a counter that has flour
      laid down on it
    Roll this out until very thin (1/4 inch, or a little thinner)
    Make sure that there is flour on both sides, but shake off the excess.
    
    Now, heat the pan until it is as hot as it can get (I mean hot!)
    IMPORTANT:  DO NOT USE ANY BUTTER OR OIL!!!!!!!!!!!!!!!!!!!!!!!!!!!!!
    Put the lefsa pancake into the pan and brown on both sides (about 45
      seconds on both sides, maybe a little longer)
    
    Remove lefsa pancake from pan, and place between clean dishrags or
      some sort of cheesecloth fabric.
    
    Serve a number of ways, hot or cold (they're better cold)
    
    1) Fold fresh turkey and cranberry sauce in the lefsa
    2) Just use plain butter on the lefsa
    3) Spread a thin layer of your faviorate jam in the lefsa
    4) Etc., Etc., Etc....USE IMAGINATION!
