    stores or sections, or specialty shops (William Sonoma's, Cardoo's,etc) It's
    very similiar to red wine vinegar, but has a stronger flavor and

|  | It's (red?) wine vinegar that has been aged for quite a while.  The flavor is 
much different from other vinegars.  And, as .1 said, it's expensive, so don't 
even think of buying the large economy size (even if you could find one).

|  | I just bought a 16 oz bottle of balsamic vinegar at Stop & Shop (in
Stoneham, MA) for about $4.00. They now carry all kinds of "exotic"
vinegars (white wine, red and white with herbs, rice, balsamic, etc.)
in addition to the standard red wine, white, and cider. This $4
vinegar may be not the finest stuff, but it's good enough for me.
Balsamic vinegar is very dark and strong.

|  |     Balsamic vinegar is really white wine vinegar that has been aged
    with herbs in oak barrels for some time.  The best balsamic vinegar
    is from Modena, Italy.
    
    An unusual recipe using balsamic vinegar for this time of year is
    to take some cleaned strawberries and mix them in a bowl with a
    spoonful of sugar and a spoonful or so of balsamic vinegar.  Mix
    gently and well.  Sounds weird, but they're really good!

    Gourmet Magazine had an article about Balsamic vinegar this month.
    The best and most expensive balsamic vinegar is that produced in
    Modena as previously mentioned in this note.  The vinegar is
    expensive because it ages up to ten years, and the flavor is the
    result of transferring it to various types of wood barrels for a
    certain length of time.  For example, it may age in oak for awhile,
    then be transferred to a barrel made of cherry wood for awhile.
    
    There is an alternative balsamic vinegar which they refer to as 
    industrial grade.  This vinegar is produced in modern factories,
    and is not aged in wood.  Instead, flavor additives are used to 
    impart the flavor.  Because of the method of manufacture, this 
    vinegar is much cheaper than the traditionally manufactured type.
    
    Though nowhere near as good as the traditionally produced vinegar, 
    they recommend it for use in cooking since the flavor will typically 
    change anyway during cooking.  The traditional vinegar can be used 
    to sprinkle on dishes at the table in which case a bottle will go a 
    long way.
