    I fixed these for Sunday morning breakfast yesterday.  They are
    quick, don't make much mess, and delicious.
    
    From the current issue of Southern Living:
    
    				PINEAPPLE FRITTERS
    
    1-1/4 cups all-purpose flour
    1-1/2 teaspoons baking powder
    1/4 teaspoon salt
    2 teaspoons sugar
    1 egg, slightly beaten
    1/4 cup plus 2 tablespoons milk
    1 tablespoon vegetable oil
    1 (8-ounce) can crushed pineapple, drained
    Vegetable oil
    Glaze (recipe follows)
    
    Combine flour, baking powder, salt, and sugar in a large bowl; stir
    well.  Set mixture aside.
    
    Combine egg and next 3 ingredients in a small bowl; mix well.  Add
    to dry ingredients; stir mixture just until moistened.
    
    Pour oil to a depth of 2 to 3 inches into a Dutch oven or heavy
    saucepan; heat to 375 degrees.  Carefully drop batter by rounded
    tablespoons into oil; cook only a few at a time, turning once. 
    Fry 2 to 3 minutes or until fritters are golden brown.  Drain well
    on paper towels.  Pour glaze over fritters.  Drain on a wire rack.
    Yield:  18 fritters.
    
    Glaze:
    
    1 cup sifted powdered sugar
    2 tablespoons milk
    
    Combine ingredients, mixing well.  Yield: about 1/4 cup.
