This is my Moms recipe for chicken chow-mein. It is not true
authentic chow-mein but it sure tastes good!! In fact, I don't
really like true chow mein as much as this one. Its easy to
make and is great with leftover chicken or turkey.
Chicken Chow Mein
6 T cooking oil
2 C chopped onion
2 C thin sliced celery
4 C cooked and slivered chicken
8 oz can mushrooms, sliced
2 cans water chestnuts, sliced
5 T cornstarch
1/2 C cold water
2-1/2 C strong soup stock
2 tsp salt
1/2 tsp pepper
2 tsp sugar
3 T molasses
2 cans bean sprouts
1 large can crunchy chow-mein noodles (La Choy)
Saute onion, celery in oil about 10 minutes. Add
chicken, mushrooms, water chestnuts and soy sauce.
Add soup stock salt, pepper, sugar. Add thickening
or cornstarch dissolvedj in cold water. Add molasses
and cook. Add sprouts and cook 10 minutes more before
serving. Serve over chow mein noodles.
