|  |     Cerises Jubilee   (Cherries Jubilee)
    
    Thaw 2 (10oz) packages of frozen sweet cherries or use a 1lb can
    of Bing (dark sweet) cherries. Drain liquid into saucepan; save
    cherries. Mix 1 tablespoon of cornstarch and 1 tablespoon suger;
    moisten with a little cold cherry liquid, then gradually stir into
    rest. Cook and stir until clear and thickened. Add cherries and
    bring to boil. Pour 1/4 cup pre-warmed brandy or kirsch on top
    (pre-warming is the secret to flaming this dish). Ignite and spoon
    flaming sauce over cherries until flames die. Serve over hard ice
    cream. Two tablespoons red current jelly may replace suger.
