664.0. "Mixed Bean Soup" by TLE::EIKENBERRY (Don't confuse activity with productivity) Sat Apr 20 1991 18:24
Here's a really good soup recipe that fits in well with WW. I make a
"half-batch", but use only 6 oz. of beans. The half-batch makes
4 servings that can be counted as any of the following:

    	3P
    	2P 1B
        1P 2B
(because of the fact that beans can count as either proteins or breads)

Technically, the onions and tomatoes can also be factored into the
    count, but I don't bother.

    Enjoy!

                                Mixed Bean Soup
2 cups mixed beans (1 lb.)
        4 cups water
        1 T salt
        2 quarts water
        8 oz. ham, diced
        1 large onion, chopped
        1 large can tomatoes, chopped
        2 tsp chili powder
        juice of 1 lemon
        salt and pepper to taste
Wash beans. Place in a large pot with 4 cups of water and salt.
        Soak overnight.
Drain beans and add 2 quarts of water and ham. Simmer slowly
for 2 1/2 to 3 hours. Add onion, tomatoes, chili powder, lemon
juice, salt, and pepper to taste. Simmer at least 30 minutes
        longer.
